Cabbage Soup

Me and Kame decided to post some of our recipes here for you guys to try 😀

Today I was searching to make for dinner for my mom, so I came up with making cabbage soup 😀

It came out to be really delicious ^^

Olive oil

1/2 of onion, chopped ( into squares if you want but not necessary)

about 12 ounces of button Mushrooms (you can use less if you want), chopped

a cup of cut celery

1 clove of garlic, chopped

Salt and pepper

fresh Basil (a few leaves)

fresh Parsley (a few leaves)

Sun-dried tomatoes from the can, or you can fresh tomatoes, sliced.

1/2 head of cabbage

4 cups of chicken broth

Oh if you are using fresh tomato (I did) you have to cook it before starting on the soup. Or you can omit using the tomato all together 😀 I use it because it gives the soup a different flavor.

I started with putting about three tablespoon  of Olive oil in a medium stockpot over a medium heat. Then I added the chopped onion, chopped mushrooms, celery and garlic in the stockpot and let it cook about some minutes, so the flavor would be released.  The add the 4 cups of chicken broth into the stockpot, add salt and pepper and let it boil.  Next add the cabbage into the soup and let it simmer until the cabbage turns a bit wrinkly or wilts, this took about 9 to 10 minutes depending on the level of heat being applied to the soup. After that put in the tomatoes (if you have them) into the soup, add the fresh parsley and the fresh basil and let it cook for about 15 to 20 more minutes. Make sure to taste the salt of the soup. And Serve

You can minimize the amount need on the ingredients or increase it.
